This healthy salad is made with moong dal, cucumber, grated coconut, lemon juice, and green chili. It’s a great appetizer or side dish for perfect and easy Sri Rama Navami feast.
- 91/2 cup split green gram (moong dal), soaked in water for 1 hour
- 91 cup cucumber, peeled and chopped
- 91/2 cup grated coconut
- 91 green chili, finely chopped
- 91 tbsp lemon juice
- 9Salt to taste
- 91 tbsp oil
- 91 tsp mustard seeds
- 91 tsp cumin seeds
- 9Few curry leaves
- 9Coriander leaves for garnishing
Drain the soaked moong dal and place it in a mixing bowl. Add the chopped cucumber, grated coconut, green chili, lemon juice, and salt. Mix well. Heat oil in a small pan and add the mustard seeds. When the mustard seeds start to splutter, add the cumin seeds and curry leaves. Stir for a few seconds and pour over the kosambari mixture. Mix well and garnish with coriander leaves. Chill the kosambari in the refrigerator for at least 30 minutes. When ready to serve, give the kosambari a good stir and serve chilled. This recipe makes 2-3 servings.
